You can still install ad-hoc apps using iTunes by following the steps under Manually add items from your computer in this tech note
The steps are:
- Connect your device to your computer and open iTunes
- Find your device in the left sidebar in iTunes
- Drag your ad-hoc IPA to the device
- Once the device listing outlines in blue, release the file.
